Overview

Nutritious Thoughts compassion-centered team of dietitians navigate nutrition from a non-judgmental space. Our approach to wellness looks at the whole person, recognizing similarities and honoring differences.  Our messaging might look different than others, our dietitians are body neutral, meaning all bodies are accepted and appreciated, we practice under the Health at Every Size philosophy to help without harming.  Nutritious Thoughts is a leader in the eating disorder community.

Cancellation Policy

We understand that plans occasionally change and unanticipated circumstances sometimes arise. There is much work that goes into the creation of a workshop, group or CEU evnet and often a wait list of eager participants. Therefore, it is necessary to have a consistent and fair cancellation policy for all involved. For cancellation requests received at least 24hours prior to the event start date, you will be charged $75.00 and refunded the balance of the workshop minus any credit card processing fees (3.75% +$.15). Cancellations received with less than 24 hours notice will forfeit the full enrollment fee. There are no exceptions to this policy.

Katie Rhodes, RD, LDNClinical Coordinator

Katie Rhodes was born and raised in Tuscaloosa, Alabama. She has taken the unconventional route with her education, beginning at Belmont University in Nashville, Tennessee where she graduated with a Major in Health and Minor in Education. Yearning for a change of scenery, Katie packed her bags for Bozeman, Montana where she fully embraced all the West had to offer her. While always having a strong interest in nutrition, it was the essence of Bozeman that influenced her to return to school to pursue a career in Dietetics.

After graduating with a B.S. in Food and Nutrition from Montana State University, Katie completed her Dietetic Internship at Lenoir-Rhyne University in Asheville, North Carolina. It was during her internship that Katie developed a calling and passion towards nutrition counseling and the specialty of eating disorders. Katie has since been pursuing her passion at Nutritious Thoughts, LLC and now holds the title of Clinical Coordinator. She is currently working towards her eating disorder certification (CEDRD) through the International Association of Eating Disorder Professionals (iaedp) and serving her local non-profit, T.H.E. Center for Disordered Eating, as a vital board member. Katie truly looks forward to making a positive difference in the lives of those who walk through the doors of Nutritious Thoughts, LLC.

Kendra L. Gaffney, RD, LDN, CEDRD-SClinical Supervisoriaedp Approved Supervisor

Kendra Gaffney was sprouted in the dirty south of Baton Rouge, Louisiana and raised in the small town of Makanda, Illinois where she attended college at Southern Illinois University at Carbondale. After graduating with a B.S. in Food and Nutrition, specializing in Dietetics, Kendra went on to complete her graduate program/Dietetic Internship at Vanderbilt University Medical Center in Nashville Tennessee. Following her graduation, she moved to the Emerald Coast of Florida.

After working as a clinical dietitian for 8 years in the Panhandle of Florida, in 2010 Kendra traveled the entire lower 48 searching for a place to open her dream business, a small group practice called Nutritious Thoughts LLC. The sights, sounds, and spirit of Asheville pulled her to the Valley of the Blue Ridge Mountains. Kendra is now living her dream as the Founder of Nutritious Thoughts, LLC. In addition, she is a Certified Eating Disorder Registered Dietitian (CEDRD) and Approved Supervisor through the International Association of Eating Disorder Professionals (iaedp). This certification was established to promote standards of excellence within the field of eating disorders. Kendra also enjoys serving her local community as an Advisory Board Member and Support Group Supervisor for the local non-profit organization, T.H.E. Center for Disordered Eating.
